Dans une grande synthèse qui s'étend de la période antique à nos jours, Didier Nourrisson, historien spécialiste de la nourriture et de la gastronomie, dresse une histoire du vin vivante et colorée. Plus qu'un simple produit fermenté issu du raisin, le vin est un révélateur de la société et de son temps. Il tisse les liens entre les hommes, reconstitue un marqueur social, un enjeu économique, culturel et, plus récemment, de santé publique.Suivant une démarche qui s'appuie sur le regard du consommateur et non sur celui du producteur – comme on le ferait plus traditionnellement –, Didier Nourrisson suit les évolutions des mœurs et les modifications du vin lui-même : car le vin antique et ses modes de consommation n'ont rien à voir avec le vin moderne. Grace à son histoire du vin, Didier Nourrisson éclaire d'une plume enlevée un champ historiographique encore en friche.

L'Institut national de l'origine et de la qualité (INAO), établissement public rattaché au ministère de l'agriculture, met en oeuvre les politiques française et européenne relatives aux produits sous signes officiels d'identification de l'origine et de la qualité (SIQO) : AOC/AOP, IGP, Label Rouge, STG et Agriculture Biologique. Toutes les productions, toutes les régions françaises, sont concernées par ces signes officiels et une exploitation agricole sur quatre est inscrite dans ces démarches. L'INAO s'est imposé peu à peu comme un acteur central de viti-viniculture contemporaine puis a élargie son action à d'autres filières en s'engageant dans une politique de qualité. En 2015, il fête le 80e anniversaire de la création des AOC et du Comité National des Appellations d'Origine, sa première dénomination, ce qui lui donne une longévité remarquable parmi les organismes agricoles. Pour autant, il n'avait fait l'objet d'aucune étude d'envergure. Cet ouvrage est le premier à rendre compte des travaux d'historiens, de géographes, de juristes, d'agronomes et d'ethnologues sur son fonctionnement. Sans regard complaisant sur le passé, il interroge, bouscule les idées reçues et invite à la réflexion. Les créateurs de 1935 ont été des novateurs, parce qu'ils ont su anticiper les évolutions de leur environnement : ce livre doit contribuer à adopter le même état d'esprit, pour aujourd'hui et pour demain.

"Eastern Wines on Western Tables: Consumption, Trade and Economy in Ancient Italy is an interdisciplinary and multifaceted study concerning wine commerce and the Roman economy during Classical antiquity. Wine was one of the main consumption goods in the Mediterranean during antiquity, and the average Roman adult male probably consumed between 0,5-1 litre of it per day. It is therefore clear that the production and trading of wine was essential for the Roman economy. This book demonstrates that wines from the Eastern Mediterranean and the Aegean region in particular, played a crucial part in wine commerce.
