Abstract

This book entitled Marine Algal Antioxidants, as a special issue of the Antioxidants journal, encloses eleven scientific articles with a preface written by the two editors, Christophe Brunet and Clementina Sansone. Marine Algal Antioxidants book reports advances of the research on marine photosynthetic organisms for the growth of biotechnological pipelines aimed to enhance antioxidant molecules production by algae. More than twenty scientists share the results of their research and highlight the relevance of algae for developing marine biotechnology products to flourish the requirements of nutraceuticals or cosmeceuticals in the defense of human health. Multidisciplinarity of the scientific approaches presented in this book – such as physiological, molecular, chemistry, technical or technological methodologies – lays the foundation for harmonizing the links between them towards the unique goal of the improvement of marine algal factory processes.

Abstract

In the last few decades, near-infrared (NIR) spectroscopy has distinguished itself as one of the most rapidly advancing spectroscopic techniques. Mainly known as an analytical tool useful for sample characterization and content quantification, NIR spectroscopy is essential in various other fields, e.g. NIR imaging techniques in biophotonics, medical applications or used for characterization of food products. Its contribution in basic science and physical chemistry should be noted as well, e.g. in exploration of the nature of molecular vibrations or intermolecular interactions. One of the current development trends involves the miniaturization and simplification of instrumentation, creating prospects for the spread of NIR spectrometers at a consumer level in the form of smartphone attachments—a breakthrough not yet accomplished by any other analytical technique. A growing diversity in the related methods and applications has led to a dispersion of these contributions among disparate scientific communities. The aim of this Special Issue was to bring together the communities that may perceive NIR spectroscopy from different perspectives. It resulted in 30 contributions presenting the latest advances in the methodologies essential in near-infrared spectroscopy in a variety of applications.

Abstract

Within the idea and objective of bringing together original studies dealing with the continuum aspects of meat, i.e., from farm to fork, this book grouped papers on the study of the nutritional, sensory, and technological aspects of carcass, muscle, meat, and meat-product qualities. This nook highlights a great part of the research activities in the field of meat science. A total of 14 original studies and one comprehensive review were edited within five main topics: (i) production systems and rearing practices, (ii) prediction of meat quality, (iii) statistical approaches for meat quality prediction/management, (iv) muscle biochemistry and proteomics techniques, and (v) consumer acceptability, development, and characterization of meat products.
