Abstract

Over the past 50 years, cereals such as maize, rice, wheat, sorghum, and barley have emerged as rapidly evolving crops because of new technologies and advances in agronomy, breeding, biotechnology, genetics, and so on. Population growth and climate change have led to new challenges, among which are feeding the growing global population and mitigating adverse effects on the environment. One way to deal with these issues is through sustainable cereal production. This book discusses ways to achieve sustainable production of cereals via agronomy, breeding, transcriptomics, proteomics, and metabolomics. Chapters review research, examine challenges, and present prospects in the field. This volume is an excellent resource for students, researchers, and scientists interested and working in the area of sustainable crop production.

Abstract

"Cereals and pseudocereals are widely grown throughout the world and their dietary and economic importance is globally appreciated and recognised. For this reason, the FAO forecasted about 15 million tonnes in the year 2016/17. Today, the grain processing industry has diverse range of products and most of the grains are processed for convenience and better utilization of the grains as whole. Nowadays, increased consumer interest towards processed foods, for its convenience purpose and readily available nutritious food products, create a constant demand to increase industrialisation for processing of these grains. This demands the food manufactures to pose different processing challenges to food manufacturers. The book is structured to cover all aspects of innovative cereal/pseudoceral processing, from the selection of raw materials to novel trends in cereals/pseudocereals use and consumption and the environmental impact"--

Abstract

The Special Issue aims to provide a complete exploration of the scientific principles related to processing, fermentation/malting, and nutrition of cereal grains. It also describes their physical and chemical characteristics and explains how these properties relate to health and nutritional value of the final grain-based products. Indeed, while grains remain the world's largest food yield-with more than 2.4 billion metric tons produced annually-consumer demands are on the rise for grain products sustainable from an environmental, social and economic viewpoint, in order to meet the growing demand for healthy and nutritious foods.
