A scholarly history of food poisoning, telling of its discovery of food poisoning as a public health problem in the 1880s, of the discovery of pathways of infection and of the Salmonella family, and of the realisation that these organisms are deeply embedded in human and animal food chains and the subsequent importance of food hygiene.

Unlike previous texts that have focussed on migratory patterns of tourists and new mobilities in tourism, Tracking Tourists: Movement and mobility is the first text to address tourist movement in from a methodological angle in the post-digital era. It assesses how movement and migration has been recorded in the past, how it may be recorded and assessed now and the possibilities for exploring movement in the future. Using international case studies that are both current and historical, it explores the range of options that exist for assessing tourists’ movement, along with the relative merits of each method. It will give a special focus to new technologies that facilitate our understanding of movement, such as the use of big data, hashtag scraping, Wi-Fi tracking, farming data from mobile phone towers and cutting-edge GPS tracking. There has been a growing recognition of the importance of mathematical and statistical methods in the history of medicine, particularly in those areas where statistical methods are a sine qua non such as epidemiology and randomised clinical trials. Despite this expanding scholarly interest, the development of the mathematical and statistical technologies in the biological sciences has not been examined systematically. Si la médecine est une profession, elle est aussi un travail dont l'objet ne s'appréhende pas aisément. Un objet qui tour à tour cimente et divise la profession, la libère et l'isole. Un objet jamais stabilisé, présentant différents niveaux de sens, mais défini par une action, travailler à guérir, composée d'actes paradoxaux, sophistiqués et chargés de tabous. Mobilisant les résultats de recherches collectives et souvent pluridisciplinaires qu'elle a menées ces quinze dernières années, Anne-Chantal Hardy propose une analyse de l'objet du travail médical. Elle en explore la dynamique, examine la manière dont il se construit, se transforme et se déplace. Elle montre comment il sépare les professionnels des « profanes » pour s'autonomiser dans la guérison. Mais qu'est-ce que la guérison au regard des concepts de maladie et de santé, plus habituels en sociologie ? Approchée à partir de l'objet du travail médical, elle est d'abord un processus, à la fois physiologique, symbolique et social. Et travailler à guérir consisterait moins à faire passer les patients de la « maladie » à la « bonne santé » qu'à les normaliser : un vrai programme sociétal porté par une profession modèle… Les médecins pratiquent des actes complexes, à la fois violents et bienfaisants, qui nous concernent tous.
