Food and nutritional security refers to the challenge of providing sustainable, healthy and accessible food to all people. It has four interconnected dimensions: availability, access, utilization and stability. Tackling this tremendous challenge means transforming our food systems and mobilizing key stakeholders and decision-makers to leverage intersectoral knowledge and scientific evidence. From 2014 to 2020, CIRAD and INRAE led an ambitious interdisciplinary flagship programme on the transitions for global food security called GloFoodS. Authored by principal investigators and contributors to research projects funded by GloFoodS, this book is representative of the programme’s interdisciplinary research but does not claim to provide exhaustive coverage of topics and approaches of food security. It presents recent research findings from many disciplines, including the life, engineering and social sciences. The findings were drawn from different analysis scales as well as from the combination of local and global food security approaches. The various chapters explore issues such as food system governance, balance and discrepancies between agricultural supply and food needs, the role of innovations in providing high-quality foods and promoting resilient value chains, and the role of local resource management in achieving food security. This book will be of interest to a broad scientific audience of researchers, academics, food systems professionals and decision-makers, as well as readers interested in food and nutritional security issues. La sécurité alimentaire et nutritionnelle fait référence au défi de fournir une alimentation saine, durable et accessible à tous les êtres humains, avec quatre dimensions couvrant des questions interconnectées : la disponibilité, l’accès, l’utilisation et la stabilité. Cet immense défi nécessite de transformer les systèmes alimentaires et de mobiliser tous les acteurs et décideurs politiques en se basant sur des connaissances et des preuves scientifiques intersectorielles et intégrées. Pour aider à relever ces défis, le Cirad et INRAE ont mené, entre 2014 et 2020, un ambitieux programme interdisciplinaire sur les transitions pour la sécurité alimentaire mondiale, appelé GloFoodS. Cet ouvrage présente des résultats de recherche récents correspondant à un large éventail de disciplines et obtenus à partir d’une variété d’échelles d’analyse, combinant des approches locales et globales de la sécurité alimentaire. Il explore des questions telles que la gouvernance des systèmes alimentaires, l’équilibre et les écarts entre l’offre agricole et les besoins alimentaires, le rôle des innovations pour fournir des aliments de haute qualité et promouvoir des chaînes de valeur résilientes, ou encore le rôle de la gestion des ressources locales pour atteindre la sécurité alimentaire. À la suite de la crise des gilets jaunes et de la COVID, la question des services publics dans les territoires de faible densité s’est imposée fortement dans l’espace public et médiatique. Les termes du débat sont connus mais les évolutions en cours sont rarement analysées de manière systémique au plus près des territoires. Les contributions rassemblées dans cet ouvrage sont celles de spécialistes reconnus qui apportent des éclairages inédits à partir d’études localisées, de données quantitatives et d’enquêtes effectuées auprès d’habitants, d’élus, d’opérateurs de services publics et d’autres acteurs. La réorganisation des services publics (dématérialisation, regroupement au sein d’espaces France Services) et ses conséquences sont finement étudiées. Après deux ouvrages consacrés au délaissement des territoires (2012) et à l’évolution des services publics dans les territoires (2017) cette équipe de recherche pluridisciplinaire, composée de sociologues, géographes et économistes apporte un complément indispensable à la connaissance des recompositions à l’œuvre dans la France des petites villes et des villages.
