Abstract

Glucosinolate-containing foods, such as vegetables from the plant order Brassicales and its derivative products, are valued for their health-beneficial properties. The latter are linked to glucosinolate hydrolysis products, such as isothiocyanates. The book “Advanced Research on Glucosinolates in Food Products” collects the latest research on the impact of the whole food supply chain, including production, as well as domestic food preparation, on glucosinolates and the formation and chemistry of their breakdown products in vegetables and further foods. In this context, the consequences for human health are important, too. The book contains articles that cover research on the effect of pre-harvest factors on glucosinolates, their hydrolyzing enzymes, and the formation of volatile hydrolysis products. Further topics include the linkage between glucosinolates and sensory aspects, and the effects of food preparation and follow-up reactivity. Finally, research on the bioavailability and functional effects of isothiocyanates for human health is included.

Abstract

Polymer composite materials have attracted great interest for the development of electrical and electronic engineering and technology, and have been widely applied in electrical power systems, electrical insulation equipment, electrical and electronic devices, etc. Due to the significant expansion in the use of newly developed polymer composite materials, it is necessary to understand and accurately describe the relationship between composite structure and material properties, as only based on thorough laboratory characterization is it possible to estimate the properties for their future commercial applications. This book focuses on polymer composites applied in the field of electrical and electronic equipment, including but not limited to synthesis and preparation of new polymeric materials, structure–properties relationship of polymer composites, evaluation of materials application, simulation and modelling of material performance.

Abstract

Biotransformation has accompanied mankind since the Neolithic community, when people settled down and began to engage in agriculture. Modern biocatalysis started in the mid-1850s with the pioneer works of Pasteur. Today, biotransformations have become an indispensable part of our lives, similar to other hi-tech products. Now, in 2019, biocatalysis “received” the Nobel Prize in Chemistry due to prof. Frances H. Arnold’s achievements in the area of the directed evolution of enzymes. This book deals with some major topics of biotransformation, such as the application of enzymatic methods in glycobiology, including the synthesis of hyaluronan, complex glycoconjugates of N-acetylmuramic acid, and the enzymatic deglycosylation of rutin. Enzymatic redox reactions were exemplified by the enzymatic synthesis of indigo from indole, oxidations of β-ketoesters and the engineering of a horse radish peroxidase. The enzymatic reactions were elegantly employed in biosensors, such as glucose oxidase, in the case of electrochemical glucose sensors. Nitrilases are important enzymes for nitrile metabolism in plants and microorganisms have already found broad application in industry—here, these enzymes were for the first time described in Basidiomyceta. This book nicely describes molecular biocatalysis as a pluripotent methodology—“A jack of all trades...”—which strongly contributes to the high quality and sustainability of our daily lives.

Abstract

The global electric car fleet exceeded 7 million battery electric vehicles and plug-in hybrid electric vehicles in 2019, and will continue to increase in the future, as electrification is an important means of decreasing the greenhouse gas emissions of the transportation sector. The energy storage system is a very central component of the electric vehicle. The storage system needs to be cost-competitive, light, efficient, safe, and reliable, and to occupy little space and last for a long time. It should also be produced and disposed of in an environmentally friendly manner. This leaves many research challenges, and the purpose of this book is therefore to provide a platform for sharing the latest findings on energy storage systems for electric vehicles (electric cars, buses, aircraft, ships, etc.) Research in energy storage systems requires several sciences working together, and this book therefore include contributions from many different disciplines; this covers a wide range of topics, e.g. battery-management systems, state-of-charge and state-of-health estimation, thermal-battery-management systems, power electronics for energy storage devices, battery aging modelling, battery reuse and recycling, etc.
