The idea of origin in terms of space and culture as a special indicator of quality is one of the most influential strands in contemporary food. It impacts on politics, economics and everyday life – and it connects these fields with complex relations of power and culture. With geographical indications, the EU offers an instrument which allows for the declaration of specialties, qualified by their tradition, as typical for a defined area. The declaration serves to protect these products as intellectual and collective property and presents them as culinary heritage, thereby enabling sale at an added value. Accordingly, the EU instrument of geographical indications evokes the interests of a variety of disciplines, such as (agricultural) economics, (social) geography, sociology, anthropology and law. Nonetheless, dialogue and cooperation among the disciplines are quite rare. “Taste | Power | Tradition” gives an insight into this multidisciplinary debate and brings together empirical data and theoretical reflections from different perspectives.

L’espace agricole c’est d’abord des agriculteurs, mais il est aussi utilisé par les habitants locaux, par les visiteurs (en particulier des villes voisines) et par les touristes, pour exercer des loisirs tels que les promenades pédestres, équestres ou en VTT, la chasse, la pêche ou la cueillette. En un même lieu, l’agriculteur habite et travaille, le promeneur ou le chasseur circulent et se récréent. À l’échelle des territoires comme à l’échelle des parcelles, cela illustre et questionne la multifonctionnalité de l’espace agricole. Pour les individus, cela entraîne des contacts directs, et ces rencontres entre agriculteurs et usagers peuvent mettre leur tolérance à l’épreuve. Plus généralement, la fonction récréative de l’espace agricole concourt-elle à l’utilité sociale des agriculteurs ? Joue-t-elle un rôle significatif dans la qualité de vie des citoyens ? This book will be a valuable source of information for those concerned with rural and farm tourism, sustainable tourism and the marketing of local gastronomy. It presents cases with an international and interdisciplinary approach in order to provide ideas for strategic perspectives in tourism studies. Within the framework of tourism companies and tourist destinations, the question of sustainability is gaining importance. Tourists are increasingly aware of the importance of sustainability criteria, awarding greater value to sustainable destinations. Sustainability refers to a wide range of aspects related to climate change, the economic organization of tourism, social values or questions, job creation, and the necessary protection of the culture of destinations and the environment. Therefore, there is a need for studies that consider these aspects in order to achieve the sustainable development of tourist destinations. Fundamental to this is discovering to what degree tourism companies and destinations approach these questions in the strategies they use to deal with problems stemming from their attempts to be more sustainable. Conceptual papers and empirical research on the economic, social, cultural, and environmental aspects related to tourism companies and destinations are welcome. Studies that analyze how these questions and the concept of sustainability are included in tourism companies and destinations are necessary in these modern times. This book was established for these reasons, dedicated to examining sustainability in tourism.
