"Minerals, like the essential metals of the human body, are crucial for human health. Although sometimes occurring in only minuscule amounts, their presence or absence can have major consequences for our cells and tissues. However, the function and interaction of metals with proteins and other metabolites in our body are not well investigated. Therefore, this book gives an introduction to metal biology and does so in a unique manner. It is based on research conducted at the University of Limerick, Ireland. It is written with students in Food and Health Sciences interested in metals and a delicious dinner. To describe the biological cycle of metals, the book starts with unique recipes developed by the students, cooked with selected ingredients based on the content of a specific metal, thereby creating a dish with maximum metal content. We then follow each metal through the gastrointestinal system, explore its distribution in the body, and describe its major functions until it is finally excreted, and the reader is hungry for the next metal and meal. This book is written for students in Life Sciences, especially Physiology, Food and Health Sciences, Nutritional Sciences, Biosciences, related fields, researchers, teachers, and the interested public. Every day, we make choices about what we eat. So why not think about which metal we may like most today and cook a meal that reminds us again of the role of this metal in the human body? Reading this book will hopefully fill the stomachs as much as the readers' brains. Bon appetite"--

The effects of nutrition in chronic conditions, such as diabetes, cardiovascular disease, dementia, stroke, and inflammatory bowel disease continue to generate interest among researchers. This stems from the fact that diet is a modifiable risk factor for these diseases, which manifest either as single entities or in co-morbid states in individuals and populations around the world. In particular, the prevalence of diabetes and cardiovascular disease is on the rise, especially in developed countries, but also in developing economies, partly due to lifestyle changes, including diet. For example, ischaemic heart disease is the leading cause of death globally. When combined with stroke, these conditions accounted for 15 million deaths in 2015 and are the world's greatest killers (WHO, 2017). Furthermore, WHO (2016), reported that there were an estimated 422 million adults who were living with diabetes in 2014. This is significantly higher than the 108 million in 1980, representing a rise in worldwide diabetes prevalence from 4.7% in 1980 to 8.5% in 2014 among the adult population. These chronic conditions and their associated complications have significant implications for morbidity and mortality, and incur huge costs to the health services around the world. The composition of the diet, the proportion and types of macronutrients and micronutrients present in the diet are major contributors to these diseases. In addition, the beneficial effects of nutritional interventions have been well documented although differences remain among researchers with respect to their overall impact. The evaluation of the role of nutrition in chronic conditions draws on its effect on body weight and body composition, glycaemic and insulin excursions, vascular remodeling, and gastro-intestinal dysfunction. Therefore, this Special Issue on "Nutrition and Chronic Conditions" aims to evaluate the effect of nutrition in the development, care, and management of chronic conditions. The primary conditions of interest are diabetes, cardiovascular disease, dementia, stroke, and inflammatory bowel disease.

This book deals with issues related to undernutrition and anaemia in India. It establishes its interconnectedness with poverty, tribal living conditions, contraception usage, dietary diversity, and socioeconomic inequality. It addresses SDG 2, namely “end hunger, achieve food security and improved nutrition, and promote sustainable agriculture.” It puts forth the linkages between mother's economic empowerment and children's nutritional status, anaemia of women with particular reference to tribal women, and the issues associated with anaemia in India. It also delves into the relationship between contraceptive usage and anaemia level. It explores the proximate and intermediate determinants of undernutrition disaggregated at the state level in India. It elaborates the importance of ensuring food security and suggests policy measures to improve maternal and child health. The book is an asset for all researchers, academicians, clinicians and policy makers dealing with sociology, economics, public policy, social work, population study, gender issues, biostatistics, health, development, and nutrition.
