Les régimes basés exclusivement sur les productions végétales prennent leur essor dans notre société occidentale actuelle tandis que les filières de productions animales sont au cœur de la critique : mauvaises pour la santé, sources de gaz à effet de serre (GES), éthiquement inacceptables. Certains consommateurs, au lieu de se tourner vers le végétarisme ou le véganisme favorisent les circuits courts. Ici, une analyse des risques et bénéfices de la production de jus de soja et de lait de vache biologique de montagne sur la santé publique et l’environnement est menée. Les résultats concernant l’impact environnemental démontrent que lorsqu’on considère la production de lait comme un cycle complet entre les ruminants et la prairie, les émissions de GES ne s’élèvent qu’à 0,14 kg CO2/ L de lait, contre 0,30 kg CO2/L pour la production d’un litre de jus de soja. De plus les prairies entretenues par les ruminants permettent une biodiversité et un entretiens des sols salvateurs pour la planète. Comparativement, d’un point de vue nutritionnel, le lait de vache biologique de montagne serait une source de nutriments qualitativement intéressants et facilement assimilables par le tube digestif, à l’inverse des nutriments contenus dans les jus de soja. Grâce à la qualité de sa production, le lait biologique de montagne est un aliment riche et d’une rare qualité et sécurité.

Les sols sont une ressource essentielle à préserver pour la production d’aliments, de fibres, de biomasse, pour la filtration de l’eau, la préservation de la biodiversité et le stockage du carbone. En tant que réservoirs de carbone, les sols sont par ailleurs appelés à jouer un rôle primordial dans la lutte contre l’augmentation de la concentration de gaz à effet de serre. Ils sont ainsi au centre des objectifs de développement durable (ODD) des Nations unies, notamment les ODD 2 « Faim zéro », 13 « Lutte contre le changement climatique », 15 « Vie terrestre », 12 « Consommation et production responsables » ou encore 1 « Pas de pauvreté ».
