5-hydroxymethylfurfural (5-HMF) is a molecule platform offering a large range of derivatives mainly used as solvents, fuel additives and materials. It is produced by the loss of three water molecules from a hexose (D-fructose or D-glucose). This work studies the conversion of D-glucose into 5-HMF in a deep eutectic solvent (DES) made of choline chloride and a carboxylic acid. The conversion of D-glucose first requires an isomerisation step allowing D-glucose to form D-fructose. In this case boric acid is used to catalyse D-glucose isomerization. D-fructose is than dehydrated in 5-HMF. This study reveals that only DES made of a carboxylic acid able to complex boric acid allows the production of 5-HMF because D-glucose conversion is favoured by a boric acid-carboxylic acid complex. Le 5-hydroxyméthylfurfural (5-HMF) est une molécule qui possède de nombreux dérivés ayant principalement des applications dans le domaine des matériaux, des carburants et des solvants. Il est principalement obtenu par la triple déshydratation d'un hexose (le D-fructose ou le D-glucose). Ce travail étudie la déshydratation du D-glucose dans un solvant eutectique profond (SEP) composé de chlorure de choline et d'un acide carboxylique. La conversion du D-glucose en 5-HMF commence par l'isomérisation du D-glucose en D-fructose. Cette étape est favorisée par l'acide borique. Ensuite le D-fructose est déshydraté en 5-HMF. Il est montré que seul les SEP à base d'acide carboxylique capable de former un complexe avec l'acide borique arrivent à convertir le D-glucose en 5-HMF. Cette observation s'explique par la formation d'un complexe acide borique-acide carboxylique capable de favoriser la conversion du D-glucose en 5-HMF.
