Cet ouvrage est le résultat de recherches menées auprès de différents types de distributeurs alimentaires : les distributeurs généralistes (Carrefour, Auchan et Casino), indépendants (Intermarché, Leclerc et Système U), spécialisés (Biocoop, La Vie Claire et Naturalia) et des circuits courts (AMAP). Il présente également des études sur la consommation responsable, la prise en compte du bien-être alimentaire et la perception que les consommateurs ont des pratiques de développement durable. Ce livre s'adresse aux chercheurs en marketing, aux étudiants de master et d'écoles de commerce, aux professionnels du marketing ainsi qu'aux néophytes soucieux de comprendre les évolutions sociétales de la consommation et les mutations du modèle économique de la distribution."
