Die Studie untersucht die systematische Zwangsübertragung sogenannter »jüdischer Unternehmen« in nichtjüdische Hände (»Arisierung«) in Frankreich während der deutschen Besatzung. Im Zentrum der Betrachtung stehen jene französischen Dienststellen, die unter deutscher Aufsicht für die Durchführung der wirtschaftlichen Verfolgungsmaßnahmen federführend waren: der Service du contrôle des administrateurs provisoires und die Direction de l’aryanisation économique. Der Band beinhaltet eine ausführliche Beschreibung von Struktur, Arbeitsweise und Rolle dieser Dienststellen, sowie eine gründliche Analyse des »Arisierungsprozesses«. Dabei werden auch die Handlungsspielräume der beteiligten Akteure und die Zusammenhänge zwischen den strukturellen Faktoren und dem Verfolgungsgeschehen eingehend untersucht.

En septembre 1669, Raphaël Lévy se rend à Metz pour y acheter un shofar et du vin pour célébrer, le lendemain soir, le nouvel an juif. Ce même jour, à Glatigny, petit village situé sur la route qui mène de Boulay à Metz, Mangeotte Villemin s'aperçoit de la disparition de son fils, le petit Didier Le Moyne, agé de trois ans. Un cavalier affirme avoir vu Raphaël Lévy portant un enfant sous son manteau. Tout s'éclaire : les Juifs ont enlevé un enfant chrétien pour célébrer leurs fêtes. L'accusation de meurtre rituel surgit ainsi en France, au moment même où s'achève la chasse aux sorcières. Dans une Lorraine des frontières, au statut politique incertain, traversée sans cesse par des guerres et des famines, le mythe réapparaît intact, alimenté par une Contre-Réforme militante. Au terme d'un long procès, dont les pièces sont pour la première fois ici présentées de manière exhaustive, durant lequel défile une pléiade d'habitants, on s'immerge dans une culture locale faite, en dépit de liens étroits de sociabilité, de préjugés et de fantasmes suscités par une population juive fidèle à ses rituels et à ses valeurs. Non seulement les Juifs sont supposés tuer de jeunes enfants pour s'emparer de leur sang, mais il s'en prendraient également, le vendredi saint, au cours de cérémonies sataniques, à la sainte hostie. Raphaël est soumis aux tortures les plus effroyables avant d'être conduit au bûcher. L'État, qui protège fréquemment ses Juifs, intervient trop tardivement, Louis XIV parvenant seulement à faire libérer les autres Juifs emprisonnés. En ce Grand Siècle où s'affirment la raison et la science, un vent de folie s'est brutalement abattu sur Metz. Puis c'est un long silence : il faudra attendre l'affaire Dreyfus pour que l'affaire Raphaël Lévy resurgisse, avant de s'effacer à nouveau de la mémoire collective.
