As increasing attention is focused on global problems of food supply and nutrition, the study of proteins (their sources, relative quality, and role in life processes) assumes a new urgent importance. Protein Nutritional Quality of Foods and Feeds is being published in two parts. Part 1 assembled the proceedings of a recent American Chemical Society symposium on the determination of protein quality. Part 2 evaluates the nutritive quality of specific proteins, protein-containing foods and feeds, and the effects of plant breeding, processing, enzymes, and antinutritional factors on protein quality. Both volumes contain invited contributions on closely related topics which are germane to a comprehensive treatment of protein nutritional quality.
