Despite representing a fairly small fraction of global tourism activity, the cruise sector has been experiencing a steady growth rate over the last years. The 1st International Cruise Conference (ICC) and its proceedings documented here face the changes which accompany this process of growth. The corresponding refereed papers are organized under the following themes: New trends and innovations, human resource management, information technology and standardization. The underlying motivation behind this collection of works is to bridge the gap between cruise theory and practice, by providing a ‘living research agenda’ aligned with the cruise sector’s realities and needs.

Tourism is a major part of the contemporary experience economy, in which food plays an important role. Food is a key part of all cultures, a major element of global intangible heritage and an increasingly important attraction for tourists. The linkages between food and tourism also provide a platform for local economic development, which can be strengthened by the use of food experiences for branding and marketing destinations. One of the major challenges in the experience economy is dealing with the shift towards intangible culture and heritage. The focus of many tourists has changed from the classic 'must see' physical sights such as museums and monuments towards a ‘must-experience’ imperative to consume intangible expressions of culture, such as atmosphere, creativity and lifestyle. This provides new opportunities for tourism destinations as well as new challenges, particularly in the areas of experience development, marketing and branding. This publication provides an understanding of the role of food tourism in local economic development and its potential for country branding. It also presents several innovative case studies in the food tourism sector and the experience industry.

This book offers insights into important trends and future scenarios in the global tourism and travel industry and analyses current challenges in the aviation and hospitality industry, destination management and general travel behaviour. Well-known notabilities share their points of view. For example, Norbert Walter, chief economist of the Deutsche Bank, writes about the financial crisis and its impact on the tourism industry. Top executives of international operating airlines like C. Karlitekin (Turkish Airlines), J. Hunold (Air Berlin) and E. Sims (Air New Zealand) have much to say about the future of airlines and aviation management. Corporate Social Responsibility is one of the top themes to-be and therefore a focus of this book, offering the perspective of the UN Foundation and the social inclusion concept of RUHR.2010, European Capital of Culture. The articles are based on presentations and panel discussions presented at the world´s largest tourism congress, the ITB Berlin Convention.
