The potato is grown in over 120 countries throughout the world and is a staple crop in several of them. It is efficient as a producer of high quality dietary nitrogen, and a very important source of vitamin C, but inefficient as a supplier of energy to the consumer. Differing environments and facilities can lead to vastly different levels of production ; the potential yield of tubers is about 100 tonnes / hectare under ideal conditions, but this rarely achieved and in several developing countries yields are as low as 5 tonnes / hectare.
