Abstract

In recent years, there has been a growing trend in the consumption of functional foods. Functional foods are those that when consumed regularly produce a specific beneficial health effect beyond their basic nutritional properties. In this book, the authors focus on providing an overview of the current knowledge on technical approaches for the manufacturing of fermented dairy foods, as well as aspects concerning nutrition and health; the effects of supplementation of yogurt with appropriate plant materials for developing novel functional yogurt with antioxidant properties; the role of probiotics applications in fermented foods and the application of probiotic bacteria in foods for promoting health benefits; and finally, the monitoring of microbial volatile organic compounds in traditional fermented foods as well as the strategies of preservation and innovation paths in the field of traditional fermented foods.

Abstract

Thomas King is the first Native writer to generate widespread interest in both Canada and the United States. He has been nominated twice for Governor General's Awards, and his first novel, Medicine River, has been transformed into a CBC movie. His books have been reviewed in publications such as The New York Times Book Review, The Globe and Mail, and People magazine. King is also the author of the serialized radio series The Dead Dog Cafe and is an accomplished photographer. Border Crossings is the first full-length study to explore King's art. Davidson, Walton, and Andrews employ a framework of postcolonial and border studies theory to examine the concepts of nation, race, and sexuality in King's work. They examine how King's art routinely explores cross-cultural dynamics, including Native rights and race relations, American and Canadian cultural interaction, and the artistic traditions of Europe and North America. The authors argue that, by situating these concepts within a comic framework, King avoids the polemics that often surface in cultural critiques. His writing engages, entertains, and educates. This provocative analysis of King's art reads across cultures and between borders, and makes an important contribution to the study of Native writing, Canadian and American literature, border studies, and humour studies.

Abstract

  This book is devoted to a wide range of problems concerning applications of nanomaterials and nanodevices as effective solutions to modern ecological problems. Leading experts in nanoscience and nanotechnology present the key theoretical, experimental and implementation issues related to the creation and utilization of novel nanoscale devices to help ensure ecological security. The authors discuss appropriate nanotechnologies for minimizing various types of risk: to human life, technogenic risk, or indeed terrorist threats. Abstract

Les trois rubriques introduites dans ce recueil tentent de refléter les divers champs d'investigation qui s'entrelacent. Sans doute l'interaction entre "les mots et la peinture" (il y a bien discours sur le tableau et/ou tableau dans le discours) donne lieu à un ensemble de communications très homogène tout en faisant appel à un corpus d'œuvres très large. La section "l'image-récit" touche, en fait, à plusieurs types de discours : le discours photographique y est certainement privilégié, puis apparaissent le discours filmique et enfin le discours figuratif de la bande dessinée. Il a paru important de regrouper dans la dernière partie ce que nous avons appelé "l'image-métaphore". Peinture et écriture, image et parole (que la peinture soit enrichissement du langage ou que le texte soit illusion féconde) posent le problème de la représentation de l'indicible ou de l'invisible et visent à transcender le réel. Tous ces textes s'interrogent en fin de compte sur la présentation de deux modes d'expression différents qui semblent impuissants séparément à rendre la perception du réel dans sa complétude et sa totalité mais dont le croisement permet d'atteindre le but impossible, la limite toujours repoussée qui, désormais, n'échappent plus au créateur.
