Pioneered by American economist Paul Samuelson, revealed preference theory is based on the idea that the preferences of consumers are revealed in their purchasing behavior. Researchers in this field have developed complex and sophisticated mathematical models to capture the preferences that are 'revealed' through consumer choice behavior. This study of consumer demand and behavior is closely tied up with econometrics (especially nonparametric econometrics), where testing the validity of different theoretical models is an important aspect of research. The theory of revealed preference has a very long and distinguished tradition in economics, but there was no systematic presentation of the theory until now. This book deals with basic questions in economic theory, such as the relation between theory and data, and studies the situations in which empirical observations are consistent or inconsistent with some of the best known theories in economics.

Symmetry has a central role in the study of vision. The concept of symmetry has an ancient origin in considerations of visual appearance; in modern times, abstracted and formalized into Group Theory, it has found spectacular applications, far beyond the visible; but its importance for vision persists in many ways including: • As a non-accidental feature of an image that cues affordances, 3D structure or the semantic categories of object present. • As a redundant aspect of an image which many be exploited for simplicity and compactness of encoding. • As a salient feature that draws attention, and evokes distinctive brain responses. • As a constraint on priors on the distribution of structures to be found in the natural world. • As an aesthetic principle. • As a design principle for vision systems. • The original idea for a Special Issue came from a symposium at the European Conference in Visual Perception, in 2015, on the topic of brain responses to visual symmetry, but we have now extended the scope. This Special Issue is devoted to provide a shared place for cutting edge studies on how and why symmetry is processed and exploited by biological and artificial visual systems.

À travers ses perceptions alimentaires, à travers ses jugements, chacun de nous ressent ou exprime ce qu'il pense avoir en lui de plus profond, de plus unique. Et pourtant, pour le sociologue, point de doute : les goûts et les dégoûts alimentaires sont bien des faits sociaux. On pourrait même écrire, en plagiant Durkheim, que chaque société est prédisposée à fournir des contingents déterminés d'amateurs d'huîtres, de sucres en morceaux, de saucisses à frire ou de sauces aigres-douces. C'est ce qui ressort clairement de la comparaison franco-allemande qui fonde le présent ouvrage. Comment s'articulent les relations complexes entre le goût et le plaisir, le goût et les préoccupations de santé, le goût et le prestige social ? Pourquoi la distinction du sucré et du salé constitue-t-elle en France un point de repère majeur dans la classification des saveurs, alors que ce n'est pas le cas en Allemagne ? le succès du ketchup sonne-t-il le glas des différences culturelles ? Pourquoi tant de Français aiment-ils la viande saignante ? Pourquoi les céréales sont-elles plus valorisées en Allemagne ? Quelle est la place du goût dans les consommations alimentaires quotidiennes ? Selon quelles logiques les goûts évoluent-ils dans le temps, et pour quels résultats ? Quelles sont, dans chaque pays, les catégories sociales les plus innovantes ?
