The Next Frontier of Restaurant Management brings together the latest research in hospitality studies to offer students, hospitality executives, and restaurant managers the best practices for restaurant success. Alex M. Susskind and Mark Maynard draw on their experiences as a hospitality educator and a restaurant industry leader, respectively, to guide readers through innovative articles that address specific aspects of restaurant management:* Creating and preserving a healthy company culture* Developing and upholding standards of service* Successfully navigating guest complaints to promote loyalty* Creating a desirable (and profitable) ambiance* Harnessing technology to improve guest and employee experiences* Mentoring employeesMaynard and Susskind detail the implementation of effective customer management and staff training, design elements such as seating and lighting, the innovative use of data to improve the guest experience, and both consumer-oriented and operation-based technologies. They conclude with a discussion of the human factor that is the foundation of the hospitality industry and the importance of a healthy workplace culture. As Susskind and Maynard show, successful restaurants don't happen by accident.

In this concise, evidence-based guide for educational leaders, the authors argue that two-year colleges can increase their rates of student success by discarding the traditional "cafeteria-style" model of course offerings and instead provide students with a "guided pathways" model in which more educationally coherent programs simplify students' choices without limiting their options and enable students to advance to further education and the labor market more quickly and at less cost.

This book assesses the institutional, technical and market constraints as well as opportunities for smallholders, notably, emerging farmers in disadvantaged areas such as the former homelands of South Africa. Emerging farmers are previously disadvantaged black people who started or will start their business with the support of special government programs. Public support programs have been developed as part of the Black Economic Empowerment strategy of the South African government. These programs aim to improve the performance of emerging farmers. This requires, first and foremost, upgrading the emerging farmers skills by providing access to knowledge about agricultural and entrepreneurial practices. To become or to remain good farmers they also need access to suitable agricultural land and sufficient water for irrigation and for feeding their cattle. Finally, for emerging farmers to be engaged in viable farming operations, various factors need to be in place such as marketing and service institutions to give credit for agricultural inputs and investments; input markets for farm machinery, farm implements, fertilizers and quality seeds; and accessible output markets for their end products. This book develops a policy framework and potential institutional responses to unlock the relevant markets for smallholders.

This Open-Access-Book analyzes the acceptance of sustainable freight transport and suggests a new framework for policy measures to decarbonize freight transport. Despite intense political endeavors, the environmental performance of the transport system has not improved in the previous years. It seems that the existing measures are not sufficient to motivate transport users to implement sustainable freight transport strategies. The case of three different strategies for sustainable freight transport is studied: horizontal collaboration in a Physical Internet network, multimodal freight transport and liquefied natural gas (LNG) as alternative truck fuel. Each of these three strategies falls within a different pillar of the avoid-shift-reduce framework. The determinants of acceptance and suggested policy measures in this study reflect transport users’ needs towards sustainable freight transport. This should support policy makers and the logistics industry to implement sustainable practices and achieve the ambitious emission targets by decarbonizing freight transport.

Researchers frequently experience sexualized interactions, sexual objectification, and harassment as they conduct fieldwork. These experiences are often left out of ethnographers' "tales from the field" and remain unaddressed within qualitative literature. Harassed argues that the androcentric, racist, and colonialist epistemological foundations of ethnographic methodology contribute to the silence surrounding sexual harassment and other forms of violence. Rebecca Hanson and Patricia Richards challenge readers to recognize how these attitudes put researchers at risk, further the solitude experienced by researchers, lead others to question the validity of their work, and, in turn, negatively impact the construction of ethnographic knowledge. To improve methodological training, data collection, and knowledge produced by all researchers, Harassed advocates for an embodied approach to ethnography that reflexively engages with the ways in which researchers' bodies shape the knowledge they produce. By challenging these assumptions, the authors offer an opportunity for researchers, advisors, and educators to consider the multiple ways in which good ethnographic research can be conducted. Beyond challenging current methodological training and mentorship, Harassed opens discussions about sexual harassment and violence in the social sciences in general.
