Abstract

Abstract

Food processing by humans goes a long way back in time, e.g., heat for cooking was used 1.9 million years ago. However, meal preparation now seems to be moving out of the home kitchen, and preprocessed or processed/convenience food products are becoming a larger part of the daily diet. In addition, consumers are progressively focusing on the impact of food on their health, and they demand foods that have a high nutritional quality and an aroma and natural flavor that are similar to freshly-made products. Therefore, nutritional quality is concurrent with food safety, and sensory perception is becoming an increasingly important factor in food choices. The human digestive tract disintegrates food to allow the nutrients to be released and made available to the body. However, nutrients can undergo unwanted degradation upon processing and subsequent storage, negatively influencing the physiological effects. Different processing techniques will result in different food structures, thereby also affecting bioaccessibility and nutritional value. Hence, food scientists and industry have an increased interest in both conventional and innovative processing methods that can provide good-quality products with high nutritional value and stable shelf life. This Special Issue aims to shed some light on the latest knowledge about and developments within the effects of food processing and storage on changes of biochemical and nutritional compounds. Both original research articles and reviews are included in this book.

Abstract

"Earth Observations for Addressing Global Challenges" presents the results of cutting-edge research related to innovative techniques and approaches based on satellite remote sensing data, the acquisition of earth observations, and their applications in the contemporary practice of sustainable development. Addressing the urgent tasks of adaptation to climate change is one of the biggest global challenges for humanity. As His Excellency António Guterres, Secretary-General of the United Nations, said, "Climate change is the defining issue of our time—and we are at a defining moment. We face a direct existential threat." For many years, scientists from around the world have been conducting research on earth observations collecting vital data about the state of the earth environment. Evidence of the rapidly changing climate is alarming: according to the World Meteorological Organization, the past two decades included 18 of the warmest years since 1850, when records began. Thus, Group on Earth Observations (GEO) has launched initiatives across multiple societal benefit areas (agriculture, biodiversity, climate, disasters, ecosystems, energy, health, water, and weather), such as the Global Forest Observations Initiative, the GEO Carbon and GHG Initiative, the GEO Biodiversity Observation Network, and the GEO Blue Planet, among others. The results of research that addressed strategic priorities of these important initiatives are presented in the monograph.

Abstract

With recent technological advances in multiple research fields such as materials science, micro-/nano-technology, cellular and molecular biology, bioengineering and the environment, much attention is shifting toward the development of new detection tools that not only address needs for high sensitivity and specificity but fulfil economic, environmental, and rapid point-of-care needs for groups and individuals with constrained resources and, possibly, limited training. Miniaturized fluidics-based platforms that precisely manipulate tiny body fluid volumes can be used for medical, healthcare or even environmental (e.g., heavy metal detection) diagnosis in a rapid and accurate manner. These new detection technologies are potentially applicable to different healthcare or environmental issues, since they are disposable, inexpensive, portable, and easy to use for the detection of human diseases or environmental issues—especially when they are manufactured based on low-cost materials, such as paper. The topics in this book (original and review articles) would cover point-of-care detection devices, microfluidic or paper-based detection devices, new materials for making detection devices, and others.
