Agriculture is certainly the most important food supplier while it globally accounts for more than 70% of water used and contributes significantly to water pollution. Irrigated agriculture is facing rising competition worldwide for access to reliable, low cost, and high-quality water resources. However, irrigation as the major tool and determinant of affecting agricultural productivity and environmental resources plays a critical role in food security and environment sustainability. Innovative irrigation technologies and practices may enhance agricultural water efficiency and production, in the meantime decrease the water demand and quality issues. This book is focused on the existing gap between the theoretical bioactivity of (poly)phenols and their real influence in terms of health, once ingested. Due to this, new studies are needed and some examples of new tendencies are included from in vitro and in vivo models which allow for exploring bioaccessibility, bioavailability, and bioactivity, that need to be developed to understand the actual importance of consuming functional foods, rich in these plant secondary metabolites. Moreover, current new strategies need to be developed to enhance the content of these foods, as well as setting up new formulations rich in bioaccessible and bioavailable compounds. Altogether, it could provide a new perspective in therapy, expanding the use of these natural functional compounds, ingredients, and foods in the clinical frame, reducing the use of synthetic drugs. As a result, the joint contribution of multidisciplinary experts from the areas of food science, health, and nutrition, together with the industrial sector, would help to reach these objectives. Taking this into account, diverse studies have been included in this study, which comprises different strategies to approach these objectives from different, complementary, points of view, ranging from the enrichment of by-products in bioactive compounds, through different agricultural techniques, to the assimilation of these compounds by the human body, both in vitro and in vivo, as well as by clinical studies.

This Special Issue opens a new field of research in certain emerging innovative instruments, because it provides an in-depth revision of the main aspects of institutions and instruments available for the management and governance of droughts and water scarcity. The key aspects that institutions may tackle not only include the increasing water scarcity in many regions around the world but also the increasing frequency and impact of droughts on economic and natural systems. Some of the included papers analyze critical issues, such as the state and future trends of water markets; the estimation of transaction costs when dealing with drought management; and the use of new instruments, such as insurance and water-rights entitlements, which include water security, water-pricing effects on the whole basin level, and intra- and inter-sectorial re-allocation. The important issues regarding non-conventional water supply and the governance of the new resources also feature as the focus of some of the contributions.

Vegetables are an important part of the human diet due to their nutrient density and, at the same time, low calorie content. Producers of vegetable crops mainly aim at achieving high yields with good external quality. However, there is an increasing demand of consumers for vegetables that provide good sensory properties and are rich in secondary compounds that can be valuable for human health. Sub- or supra-optimal abiotic conditions, like high temperatures, drought, excess light, salinity or nutrient deficiency, may alter the composition of vegetable crops and at the same time, result in yield loss. Thus, producers need to adapt their horticultural practices such as through the choice of variety, irrigation regime, light management, fruit thinning, or fertilizer application to improve the yield and quality of the vegetable product. In the future, altered climate conditions such as elevated atmospheric CO2 concentrations, rising temperatures, or altered precipitation patterns may become additional challenges for producers of vegetable crops, especially those that cultivate in the open field. This raises the need for optimized horticultural practices in order to minimize abiotic stresses. As well, specific storage conditions can have large impacts on the quality of vegetables. This Special Issue compiles research that deals with the optimization of vegetable product quality (e.g. sensory aspects, composition) under sub- or supra-optimal abiotic conditions.
